I made a YouTube video this morning demonstrating just how easy it is to make a Paleo dessert recipe . Since I had a few overripe bananas lying around the kitchen, I decided to make a Paleo banana bread. This is not all that different from a traditional banana bread, except that it avoids glutens by using almond flour, and removes dairy altogether. The recipe is also sugar-free, so it would be appropriate for people wishing to avoid refined sugar, and also milk and wheat products.

Overall, the recipe turned out quite well, but I will caution you one thing - well, two things, really. First, you will need to do the standard “toothpick test” to see if the bread is fully cooked. My oven is a bit quirky, and even though the toothpick came out clean, the bread really needed another 5 minutes or so in the oven. Second, since there is no added sugar, the bread will not be all that sweet. You could certainly serve some fresh fruit atop this bread and perhaps drizzle it with coconut milk or something like that, if you are looking for something a bit more sweet.
